Easy raw carrot ginger soup:
- 5 medium organic carrots
- 1-2 tsp grated ginger
- 2 stalks organic celery
- 1/4 cup raw cashews*
- 3/4 cup unsweetened soymilk**
- Sea salt & pepper to taste
- 1-2 tbs hemp protein powder (optional)
- 1 1/4 cup water (if you’d rather have warm soup, heat up the water beforehand on stove or with tea kettle!)Put in a blender and blend until smooth. If you’re not a fan of the veggie pulp, pour the liquid out threw a strainer (or cheesecloth if you want an almost juice-like consistency).
Garnish with some nutritional yeast and enjoy!
* Can be substituted with avocado or other healthy fat
** Can be substituted with water or other milk of choice
